Biscotti (Sliced Almond Cookies)
    Full batch makes about 2 ½ - 3 pounds of cookies
Half batch makes about 1 ½ - 2 ½ pounds of cookies

Ingredients

Full Batch

2 (1 2/3) cups
1 cup
1 cup
2 eggs
2 tsp.
2 tsp.
2 tsp.
1/3 cup
1/4 cup
3 cups

 

 

Half batch

1 (5/6) cups
½ cup
½ cup
1 eggs
1 tsp.
1 tsp.
1 tsp.
1/6 cup
1/8 cup
1 ½ cups

 

 

 

Roasted almonds (or sliced)
Sugar
Dark brown sugar
for recipe plus 1 egg for brushing on logs
Cinnamon
Nutmeg
Baking powder
Vegetable oil
Warm water
Flour

Mixing

Mix all ingredients except water and flour. Add water and flour alternately.

Forming

Roll into logs. Place on greased cookie sheet. Brush tops of the logs with a beaten egg white.

Baking

Preheat oven to 375 degrees.

Bake at 325 for 20-30 minutes depending on your oven. Let cool from oven 3 minutes. Slice into diagonal cuts while still warm.

These are like a biscotti cookie but more on the soft side.
