Ricotta Cake

This is really pretty easy to make and tastes fantastic. I’ve brought this along for cookouts and pot lucks and it’s always a hit


1 Yellow Cake Mix
2 Lbs Ricotta Cheese
4 Eggs
1 Tbsp. Almond Extract
1 Cup Sugar


Grease and flour 9” x 13” pan. Preheat Oven to 350°. Mix cake as directions indicate. Pour cake into prepared pan. Mix ricotta cheese, eggs, almond and sugar together. Drop cheese mixture by heaping spoonfuls, on top of uncooked cake batter until all cheese has been used. Bake for approximately 1 hour. Test with toothpick until it comes out clean. Cool completely. Sprinkle with confectioner's sugar if desired.

Experiment with your favorite cake mix! Strawberry, pineapple, devil’s food, etc. I’ve found that just about any cake mix works well.
